Ten Foods Most Prone to Food-Borne Illness

The Center for Science in the Public Interest (CPSI) has published a list of the 10 riskiest foods regulated by the Food and Drug Administration (FDA).  Topping the list:  leafy greens, eggs, and tuna.  These and seven other foods account for nearly 40% of all food-borne outbreaks linked to FDA-regulated food.

Over 1,500 separate, definable outbreaks were associated with the top 10 riskiest FDA-regulated foods, causing nearly 50,000 reported illnesses. Since most food-borne illnesses are never reported, these numbers may be significantly higher.

The ten foods named in this study are:

  • Leafy greens, including iceberg lettuce, romaine and spinach
  • Eggs
  • Tuna
  • Oysters
  • Potatoes
  • Cheese
  • Ice Cream
  • Tomatoes
  • Sprouts
  • Berries

CPSI study authors say there is no reason to avoid these foods, but notes that the following passage of the Food Safety Enhancement Act by the House of Representatives in July, similar legislation is pending in the Senate to provide the FDA with enhanced authority to better protect consumers.

Lutein, black currant extract may reduce visual fatigue

Visual fatigue such as computer eye strain caused by staring at the computer for long hours, may be eased a daily supplement containing blackcurrant fruit extract (200 mg), lutein (5 mg), and zeaxanthin (1 mg), according to a randomized, double-blind, placebo-controlled cross-over trial.

The findings, published in the journal Applied Ergonomics, adds to the ever growing body of science supporting the eye health benefits of lutein and zeaxanthin.

Insufficient levels of vitamin D puts elderly at increased risk of dying from heart disease, based on new study recently published in the Journal of the American Geriatrics Society

A new study by researchers at the University of Colorado Denver and Massachusetts General Hospital (MGH) shows vitamin D plays a vital role in reducing the risk of death associated with older age. The research, just published in the Journal of the American Geriatrics Society, evaluated the association between vitamin D levels in the blood and the death rates of those 65 and older. The study found that older adults with insufficient levels of vitamin D die from heart disease at greater rates that those with adequate levels of the vitamin, with approximately 1/3 of seniors considered to be deficient in vitamin D.

A large study found strong evidence that older people who have age-related macular degeneration (AMD) are at increased risk for coronary heart disease (CHD), although not for stroke. This result adds to mounting evidence that AMD and cardiovascular disease may share some risk factors–smoking, High Blood Pressure, inflammatory indicators such as C-reactive protein (related to inflammation), genetic variants such as complement factor H–and disease mechanisms.

The Cardiovascular Health Study (CHS) followed 1,786 white or African American participants, who were free of CHD or stroke at the study’s outset, for about seven years. The CHS received funding from the National Heart, Lung and Blood Institute, a division of the National Institutes of Health.

The incidence of CHD was 25.76 percent in patients with AMD, compared with 18.9 percent in those without AMD. The association between AMD and CHD was somewhat stronger in people age 69 to 78 than age 79 and up. Data were adjusted to counter potentially confounding factors like hypertension, diabetes, and smoking.

Vitamin C protects the skin

Research conducted at the University of Leicester in England, reported this year in the journal Free Radical Biology and Medicine, contributes to the understanding of the mechanisms involved in vitamin C’s ability to help heal and protect the skin. The vitamin is an essential cofactor for the synthesis of collagen, the predominant protein in skin and other connective tissue.

This research is particularly relevant for skin disease due to sun damage, and that scientists now believe that the free radical theory of disease also applies to the aging of the skin. Free radicals are unstable small molecules generated by an oxygen environment which require stabilization by the body’s antioxidant system.

Can Eating Dark Chocolate Lower the Risk of Fatal Heart Attacks?

Researchers in Sweden have recently published a study assessing the long-term effects of chocolate consumption on patients with established coronary heart disease.

In the study, published in the Journal of Internal Medicine, researchers followed 1169 non-diabetic patients hospitalized with a confirmed first heart attack between 1992 and 1994 in Stockholm County, Sweden. Participants completed a questionnaire on their usual chocolate consumption over the preceding 12 months and underwent a health examination 3 months after discharge. Participants were followed for 8 years.

Participants who consumed chocolate twice a week or more were almost 70% less likely to die from future heart attacks than those who rarely ate it. This affect was not found with other sweets.

Study authors noted that this affect is found with only with dark chocolate, high in flavonoids and polyphenols, rather than milk or white chocolate.

A supplement of meso-zeaxanthin may bolster macular pigment optical density (MPOD), according to researchers from Florida International University (Nutr Metab . 2007;4:12) (DOI:10.1186/1743-7075-4-12). Lutein and zeaxanthin have been the primary focus of research trials exploring how the xanthophyll carotenoids can support macular pigment and possibly prevent onset of age-related macular degeneration (AMD). Meso-zeaxanthin is the third major carotenoid found in macular pigment.

 

Update on Meso-Zeaxanthin

A new study, known as Meso-zeaxanthin ocular supplementation trial (MOST), begins in late March 2010 and the clinical research team are currently recruiting suitable candidates. The specialists involved in the trial are research experts in this area of eye disease. The trial requires 60 patients who have been diagnosed with early AMD. After a complimentary eye screening by an IVR Ophthalmologist, suitable candidates will be enrolled into the trial and provided with a 12-month course of dietary supplements containing the macular pigments.

Antioxidants found in fruit and vegetables such as carrots can help slow down sight loss in older adults, say scientists.

In a five-year study which included more than 400 people, scientists in Belfast and Waterford showed that the intake of high levels of both carotenoids – rich antioxidants found in fruit and vegetables – preserved macular pigments, slowing down the progression from early to late age-related macular degeneration (AMD).

Fresh Cut Fruit

Fresh-cut fruits is one of the fastest growing food categories in U.S. supermarkets, but what effect does processing and storage have on the nutritional value of the fruit?

Surprisingly, an international team of scientists has found that cutting and packaging fruit had almost no affect on the main antioxidants.

Their report, published in the Journal of Agricultural & Food Chemistry, shows that fresh-cut fruit retains vitamin C and other healthful antioxidants after days on the shelf.

The researchers obtained pineapples, mangoes, cantaloupes, watermelons, strawberries and kiwifruits from wholesale commercial sources in California.  The fruit was taken to a laboratory at the University of California in Davis. Half of each lot was processed as fresh-cut and half left whole.

Both lots were refrigerated under identical conditions for nine days and then tested for nutrient content. Tests showed only small losses of antioxidant compounds in the cut fruit compared to fruit left whole. Levels of some antioxidants in fresh-cut mango and watermelon actually increased due to exposure to light.

In general, researchers found that fresh-cut fruits visually spoil before any significant nutrient loss occurs.

Vegetables & Nuts

University of Liverpool scientists claim that macular degeneration could be reduced by up to 20% by increasing the amount of fruit, vegetables and nuts in the diet.

Age-related macular degeneration (AMD) is a leading cause of blindness, as individuals gradually lose their central vision due to the failure of cells in the macula (the light sensitive membrane at the center of the retina).

Professor Ian Grierson, Head of Ophthalmology at the University of Liverpool, said: “Poor eating habits have a huge impact on health in general and the health of your eyes is no exception. Eye problems such as AMD, cataract and even glaucoma can all be affected by what we eat. But a relatively minor change in diet – adding a little more fruit into our meals – can make a profound difference and can keep eye diseases like AMD at bay for up to 20% longer.

“There are of course other risk factors related to AMD such as age, light exposure, smoking and being overweight. But if we can improve the kind of food that we eat, we could dramatically reduce the number of people who may suffer from eye diseases in the future.”

Grierson recommends incorporating fruits and nuts as minor additions to what we already eat, such as peaches with ham or ginger with melon.  He believes this will help slow down or even prevent the degeneration process by increasing micronutrient, vitamin and antioxidant intake in the diet.

Mini-Strokes May Cause Vision Loss for Those with Normal Tension Glaucoma

The Hong Kong study of 286 people with normal-tension glaucoma found a high incidence of silent cerebral infarcts among those whose loss of vision progressed more rapidly. The finding is in the July issue of Ophthalmology.

A study of people who suffer the mini-strokes called silent cerebral infarcts could help explain the medical mystery of normal-tension glaucoma, Hong Kong ophthalmologists report.

The Hong Kong study of 286 people with normal-tension glaucoma found a high incidence of silent cerebral infarcts among those whose loss of vision progressed more rapidly. The finding is in the July issue of Ophthalmology.

Editor’s Note: Although the traditional approach to managing normal tension glaucoma is to lower intraocular pressure with glaucoma medications, the reason for the actual vision loss it still not known. This study may offer some insight into this vision loss.

We have long subscribed to the idea the vision loss for people with normal tension glaucoma is at least partially due to poor circulation to the optic nerve, and that taking nutrients and herbs that help strengthen circulation to the optic nerve and help fortify the optic nerve can help preserve vision.

Such nutrients include gingko biloba, taurine, vitamin B12, alpha lipoic acid, bilberry, lutein, zeaxanthin, grapeseed extract and omega-3 fatty acids.

Eat Fish to Fight Macular Degeneration

A new study provides further evidence that a diet high in omega-3 fatty acids may reduce the risk of age-related macular degeneration (AMD).
A NIH-funded study group led by Dr. Chi-Chao Chan at the National Eye Institute in Bethesda, Maryland, examined the effect of omega-3 fatty acids on a mouse model of AMD. Mice that were given a diet including high levels of omega-3 fatty acids showed slower retinal lesion progression, with improvement in some lesions.

Study authors suggest that the results “further provide the scientific basis for the application of omega-3 fatty acids and their biologically active derivatives in the prevention and treatment of AMD.”

Excellent sources of omega-3 fatty acids include cold water oily fish such as salmon, herring, mackerel, anchovies and sardines.
